This new recipe is peanut free, and has a holiday taste of rum, real rum&#8230; hic!&#8230; plus, they&#8217;re filled with healthy ingredients! They combine the shape of the peanut butter cups, making them so easy to make and serve, and the filling of luscious fudge <a href=\"http:\/\/www.paulineedward.com\/inthekitchen\/brownies\/\">brownies<\/a>&#8230; According to my volunteer taste testers, they are yummy! \ud83d\ude42<\/p>\n<p>PS the mini muffin tins I use for these treats can still be found at Dollaramas in my neighbourhood.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2112\" src=\"https:\/\/i0.wp.com\/www.paulineedward.com\/inthekitchen\/wp-content\/uploads\/2015\/11\/minimuffintins.jpg?resize=642%2C429\" alt=\"mini muffin tins\" width=\"642\" height=\"429\" srcset=\"https:\/\/i0.wp.com\/www.paulineedward.com\/inthekitchen\/wp-content\/uploads\/2015\/11\/minimuffintins.jpg?w=642&amp;ssl=1 642w, https:\/\/i0.wp.com\/www.paulineedward.com\/inthekitchen\/wp-content\/uploads\/2015\/11\/minimuffintins.jpg?resize=300%2C200&amp;ssl=1 300w\" sizes=\"auto, (max-width: 642px) 100vw, 642px\" \/><\/p>\n<h4>Ingredients<\/h4>\n<p><em>Filling<\/em><br \/>\n\u00be cup black beans, cooked<br \/>\n\u00bc cup cocoa powder<br \/>\n3 tablespoons dark rum<br \/>\n1 tablespoon coconut oil<br \/>\n4 tablespoons powdered sugar<br \/>\n1 teaspoon vanilla<br \/>\npinch of salt<br \/>\n2 tablespoons black chia seeds<br \/>\n2 tablespoons roasted almonds, chopped<\/p>\n<p><em>Chocolate Cups<\/em><br \/>\n2 cups chocolate chips<br \/>\n2 teaspoons coconut oil<\/p>\n<p><em>Topping (optional)<\/em><br \/>\nCoconut shreds or roasted almonds, chopped<\/p>\n<h4>Instructions<\/h4>\n<p>Place all filling ingredients except chia seeds and almonds in food processor. Process until smooth.Transfer to small bowl; add chia seeds and almonds. Mix well; refrigerate to firm up.<\/p>\n<p>Melt chocolate chips with coconut oil in top of double boiler (or microwave in 15 second intervals, being careful not to burn the chocolate).<\/p>\n<p>Line 2 mini muffin pans with liners. (24 in all)<\/p>\n<p>Make 1 inch balls with the cooled filling; set aside on a plate.<\/p>\n<p>Fill bottom of liners with a heaping teaspoon of melted chocolate. Place a ball of filling in the chocolate; press slightly so the chocolate rises up the sides. Pour another teaspoon of melted chocolate over the filling, ensuring that no filling is visible.<\/p>\n<p>Sprinkle with coconut, if desired.
