They make a great gift, and they are my most popular snack food for meetings and workshops!<\/p>\n<p>The recipe can be found on the Ocean Spray Craisins bag (the huge 1.8 kg bag from Costco). I&#8217;ve modified the recipe a bit, reduced the sugar, and replaced the eggs with ground flax seeds for a vegan version; simply use eggs for a non-vegan version.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2584 alignright\" src=\"https:\/\/i0.wp.com\/www.paulineedward.com\/inthekitchen\/wp-content\/uploads\/2017\/08\/cranoatcookies_pan.jpg?resize=284%2C203\" alt=\"\" width=\"284\" height=\"203\" \/><\/p>\n<p>I also use a blend of organic whole grains such as spelt, red fife, quinoa or brown rice. I like to shape them in cookie molds. If you want them to be vegan, you will have to shop for vegan white chocolate chips; I can&#8217;t find them in the stores nearby, so I use regular white chocolate chips, so technically, these are not 100% vegan. Sometimes I combine coconut oil with Earth Balance butter. Oh yeah, and one more special ingredient: love. \ud83d\ude42<\/p>\n<h4>Ingredients<\/h4>\n<p>\u2154 cup coconut oil or vegan butter, softened<br \/>\n\u2153 cup cane sugar<br \/>\n2 tablespoons ground flax seeds plus 1\/3 cup water (equivalent to 2 eggs)<br \/>\n1\u00bd cups rolled oats<br \/>\n1\u00bd cups flour<br \/>\n1 teaspoon baking soda<br \/>\n\u00bd teaspoon salt<br \/>\n1 teaspoon vanilla<br \/>\n1 cup dried cranberries<br \/>\n\u2154 cup white chocolate chips<\/p>\n<h4>Instructions<\/h4>\n<p>Preheat oven to 350\u00b0.<br \/>\nCombine oats, flour, baking soda and salt.<br \/>\nIn separate bowl, beat butter and sugar with mixer, or whisk until fluffy.<br \/>\nAdd flax seed mixture and vanilla; beat well.<br \/>\nStir dry ingredients into liquid; mix well.<br \/>\nStir in cranberries and chocolate chips.<br \/>\nDrop by spoonfuls onto lightly greased cookie sheet or parchment paper; or use cookie molds.<br \/>\nBake about 12 minutes.<br \/>\nMakes 30 to 36 cookies.<\/p>\n<p>Enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ok, I haven&#8217;t met anyone who can eat just one of these, ok, maybe I have learned some self-discipline&#8230; I only had one at lunch while my guest had four, maybe five!
