Spice it up with as much ginger as you like and let yourself be warmed from the inside out! Great with freshly baked wholegrain bread, rolls or crackers. This recipe is based on one found in the Vitamix Cookbook! If you don&#8217;t like tofu, replace it with cooked rice, quinoa or soaked cashews.<\/p>\n<p>PS you will find an excellent recipe for quinoa crackers on <a href=\"http:\/\/wendypolisi.com\/quinoa-crackers\/\" target=\"_blank\" rel=\"noopener\">Wendy Polisi&#8217;s blog<\/a>!<\/p>\n<h4>Ingredients<\/h4>\n<p>2 cups carrots (2-3 carrots)<br \/>\n1\/4 small onion<br \/>\n4 small garlic cloves<br \/>\n2 tablespoons oil<br \/>\n1\/2 teaspoon salt (or more to taste)<br \/>\n1-2 tablespoons fresh ginger, peeled<br \/>\n1\/3 cup tofu<br \/>\n2 cups vegetable broth<br \/>\nFresh ground pepper<\/p>\n<h4>Instructions<\/h4>\n<p>Chop carrots, onion and garlic by hand, or in blender.<br \/>\nSaut\u00e9 onions in oil about 5 minutes. Add carrots and garlic and saut\u00e9 5 additional minutes. Add a little broth if dry.<br \/>\nPlace all ingredients in blender.
