Ingredients

Dry Ingredients
1½ cups millet flour
1 cup buckwheat flour
2½ teaspoons baking powder
½ teaspoon baking soda
2 tablespoons ground flax seed
1 teaspoon salt

Wet Ingredients
2⅔ cups water
1 tablespoon apple cider vinegar
⅓ cup whole psyllium husks
⅓ cup cane sugar or ½ cup date powder
2 teaspoons vanilla
Extra water as needed

Preparation

Preheat oven to 350°.
Combine dry ingredients in mixing bowl.
Combine wet ingredients in separate bowl. Allow to rest for 5 minutes, until gel-like.
Add dry ingredients to wet.
Scoop into muffin tins.
Bake for 18 minutes.
